Teen Beach Movie Night

Anyone who is a follower of our lives knows that our college kids are SO important to us.
We have been blessed that a few of them have been around this summer.
Mady came down to spend the weekend with Hayley, so we KNEW we had to have movie night.
The movie - Teen Beach Movie
We had tried to watch it another time but got interrupted by flashlight tag, I believe.
So, this was the perfect night!
We put out a few decorations to celebrate the beach and the end of the summer.
Mady, LB and Damon made cupcakes  with a beach theme.

We crushed graham crackers for the sand.
X-treme Sour Patch things for the beach towels.
(I really have NO idea what they are called!)
Nemo fruit snacks for fish in the sea that was made from blue sugar crystals.
They were a HIT!

We had a TOTALLY SURFIN' GOOD time!

A Brunch for the Bride

I guess it is a southern wedding tradition but it is one of my favorites.
I remember my own and loved that special time I was able to spend with my dearest friends
right before the big day arrived.
When Jessica got engaged, Mom and I knew we wanted to do something like this for her.
We asked Mrs. Laurel Sewell to assist us with it and I believe Jessica's Bridesmaids' Luncheon
turned out lovely.

We decided to host the event on Thursday morning before the wedding on Friday at the
historic Hardeman House on the campus of FHU.
We ate on the back porch where white rod iron tables were graced with burlap tablecloths,
different place settings of china, tea glasses and a tea pot with pink rose buds in the middle.
Each guest had a name card in the shape of a wedding dress to add to their place setting.

The Menu:

Banana Punch
Various coffees and teas
Traditional Breakfast Casserole
Egg Casserole
Ham and Swiss Sliders
Blueberry Muffins
Zucchini Bread
Banana Nut Bread
Strawberry, Orange Honey and Regular Butter
Fruit Salsa

Once everyone was finished eating, each guest found a word inside their name card.
From this word, each guest stood and gave a blessing on the new couple.
Some of the words included were: memories, service, work, empathy, family, friends, courage, time,
days, wisdom, influence and peace.

Clay's mom giving her blessing.

Mrs. Donna, Jessica's mom, giving her blessing.

Anna Catherine giving hers.

Then, we made our way to the parlor for pictures.

The McCoy Family women (Mrs. Donna's side of the family)

Jessica and the Leonard women

The wedding party

I am so glad we were able to honor Jessica this way.
Now it is time to get that church looking like a wedding is going to take place!

Literary Ladies: A Night with Tamera Alexander

For our May book for Literary Ladies, we chose Tamera Alexander's A Beauty So Rare.
We have read her books before and loved them, so this really was a no brainer.
Then when we heard that our county's Arts Council was having her come to town to speak,
we really knew we had to read this latest book!

We had our meeting at FHU's Brown Kopel Business building.
We had a table set up to buy her books, to join the Arts Council, to have photographs
taken with her and then a place where she would sign books later.

We, then, went into Ayers Auditorium where my friend, Sherry, introduced Tamera, who
had been in college with Sherry.
Tamera walked us through her books and how she became a writer.

After her talk, we invited everyone back to the lobby for light refreshments as well as a chance to
meet with Tamera.

Menu:

Eleanor Braddock's Pink Dress Punch

1 container of raspberry sherbet
2 liter of Ginger Ale

Mix together

Buckingham Palace Tea Cookies

1 c. all-purpose flour
1/4 c. sugar
1/4 c. confectioner's sugar
1 T. tea (we used Buckingham Palace Garden Party Tea)
1/4 t. salt
1/2 t. vanilla
1 t. water
1/2 c. unsalted butter

Preheat the oven to 375.  Pulse together all the dry ingredients in a food processor
until the tea leaves are pulverized.
Add vanilla, water and butter.  Pulse together until a dough is formed.  Form the dough into
a log onto a piece of wax or parchment paper.  Wrap the paper around and roll the log smooth.
Freeze now or chill for at least 30 minutes.
When chilled, slice the log into thin slices.  You will need a sharp knife for this to cut smoothly without smushing the dough.  Place on baking sheets and bake until the edges are just brown, about 12 minutes.  Let cool on sheets for 5 minutes, then transfer to wire racks.  Makes 2 dozen.

Millionaire's Shortcake

Crust:   2 c. all-purpose flour
2 sticks unsalted butter, cut into 1/2 in. cubes
1/2 c. dark brown sugar, packed
 2 T. ice water
4 t. Cornstarch
1/2 t. salt
2 large egg yolks

Preheat the oven to 350.  Line a 9x13 pan with aluminum foil, pushing the foil neatly on the corners
and up the sides of the pan.  Spray the foiled pan with nonstick cooking spray.  In the bowl of a food processor fitted with a metal blade, combine the flour, brown sugar, cornstarch and salt; process until well combined and no lumps of brown sugar remain.  Add the butter and pulse until a coarse meal forms.  Add the ice water and egg yolks and blend until moist clumps forms.  Dump the dough onto the prepared pan and press with your fingers into an even layer (dust your fingers with flour if the dough is too sticky). Pierce the dough all over with a fork and blade until golden, about 20 minutes.  Set aside to cool.

Caramel Layer: 2 cans sweetened condensed milk
4 T. dark corn syrup
1 c. dark brown sugar, packed
2 t. vanilla extract
1 1/2 sticks unsalted butter
generous pinch of salt

Whisk the sweetened condensed milk, dark brown sugar, dark corn syrup, butter, vanilla and salt together in a medium saucepan over medium heat until the sugar dissolves, the butter melts and the mixture comes to a boil.  Attach a candy thermometer to the side of the pan and boil gently, whisking constantly, until the caramel is thick and the temperature registers 225 degrees F, about 6 minutes.  Pour the caramel over the warm crust; spread to edges.  Cool for about 15 minutes or until caramel is set.

Chocolate Layer: 12 oz. semi sweet chocolate chips
6 T. heavy cream
Sea Salt

Place the chocolate chips and cream in a microwave-safe bowl. Microwave in 20 second intervals, stirring in between, until the chocolate is melted and the mixture is smooth.  Spread the chocolate over the caramel layer.  Sprinkle sea salt over the chocolate.  Refrigerate the bars until the chocolate is set, at least 1 hour.  Using the foil overhang, lift the bars out of the pan and transfer to a cutting board.  Cut into small squares and store in refrigerator until ready to serve.
Note: The shortbread layer will crumble a bit when you cut it; that's just the nature of it.  Makes 144 small bites.

Cheese Cubes and Crackers

Tamera was so generous with her time and talents.
She treated each person like an individual and made each visit so personal.
We appreciate all she did to make the night a success!

For our next book club, we are each choosing a classic book to read.
We will have a book swap at the next meeting!
What classic book have you never read but want to
or
what is your favorite classic to reread?

Literary Ladies: It Happened At the Fair

In March, our Literary Ladies at church had our meeting to discuss our latest book we had read
It Happened at the Fair by Deeanna Gist.
I absolutely LOVED this book.
It takes place at the Chicago's World Fair in 1893.
This book has everything in it -
history...
love...
chocolate...
firefighters...
beauty...
mystery...
We had a wonderful time reading it and fabulous time talking about the book.

Tables were set and decorated to recognize the different buildings the World's Fair had to offer.
Of course, we couldn't go without a table to represent the firefighters!

A Ferris Wheel graced the food table since it made its debut at the
Chicago's World Fair.

World's Fair Menu:

Chicago Style Hot Dogs
Cupcakes
Popcorn
Peanuts
Hot Chocolate
Cracker Jacks
Doughnuts

It was a fabulous night at the fair!
Our next book to read is Tamara Alexander's
A Beauty So Rare.

She will be making a guest appearance at the meeting as well!

Jessica's Christmas Shower

A few years ago, we (I really don't know who "we" is) started a tradition of giving a bride
a Christmas shower.
It became a huge with our group.
(Don't really know how I became part
of the group since my child is NO. WHERE. CLOSE. to getting married, but I am glad I am part of this group!)
So, naturally, when Jessica became engaged, we were going to have a Christmas shower for her,
and what a lovely morning it was!

Jessica opened numerous gifts of all kinds . . .

Jolly Times with Jolly the Elf

Our Christmas Elf, Jolly, came back this year with a different message for the kids.
He still did some crazy things around the house, but his purpose this year
was to spread a little cheer to others.
Some days he would leave the kids challenges to spread Christmas cheer to others.
They met his challenges head on and seemed to enjoy it!

The first day he left peppermint seeds for the kids to plant in the oatmeal.  He said they would see the seeds grow as they showed kindness to others.
This day we found him with Damon's wallet. He told the kids to go shop for the patients
at St. Jude.
Another day we found him like this and the kids were to make Christmas cards for those who were
sick, lonely or sad.

Proof that Jolly still was up to some crazy tricks.
He was ready for us to decorate the Christmas tree!
The peppermint seeds eventually grew to candy canes and then it was the kids' job to
pass the candy canes out to different people!

On Christmas Eve morning, Jolly and Jingle (Walker and Lucy's Christmas Elf) left the kids a North Pole breakfast.  The kids had a great time!

North Pole Breakfast:

Reindeer pancakes
Snowballs (powered doughnuts)
North Pole blankets (pigs in a blanket)
hot chocolate
milk

Plates, elf containers and napkins bought from Oriental Trading
Mugs and sippy cups from Target
