Breakfast Tacos
1 dozen eggs
1 lb. sausage
1 package of shredded hashbrowns
Cook eggs. (I cook them and then place them in a bigger pot on low to keep warm) Brown sausage and drain. (Add to the eggs) Brown hashbrowns. (Add to egg and sausage) Mix all together. Serve on flour tortillas with salsa on top.
My kids love this meal except Laura Beth always ask for hers "without a cast" (flour tortillas).

Another favorite recipe that can be made ahead:
Warm Wintry Muffins
1 qt. buttermilk
4 eggs, beaten
5 c. flour
3 c. sugar
5 t. soda
2 t. salt
1 c. oil
Mix all together. Add 1 (15 oz.) box Raisin Bran Cereal and 1 c. raisins. May be kept in refrigerator up to 6 weeks. Pull out what you need in the morning and put in muffin cups. Bake at 350 for 20 - 25 minutes.
